The elusive Henry Gates

Hi all,
I have lost my GG Granfather, Henry Gates and I am hoping someone can help. He appears in the 1851 census at 25 North Lane Brighton as an Egg Merchant, and he emigrated to Australia in 1859.
However, searching the 1855 Directories, he is not at North Lane, and is not listed as an Egg Merchant in the Trade Directories. In an earlier inquirey, Andy Grant advised that he varied his occupation, also working as a fruiter, pork butcher & grocer, however he is not listed under any of those occupations either. His occupation on the shipping list to Australia was farmer and he was not listed in the directory under that either. Can someone please help??.
